Where did it come from?
From the southwest of France, it is a natural cross between Cabernet Franc and Gros Cabernet. It was first mentioned in the town of Bergerac in 1783.
What does it taste like?
It has a wide spectrum of aromas from green tobacco to ripe, black currants. It almost always has a trademark herbaceous note. In the Santa Rosa Valley, it gets ripe enough to showcase the cassis notes of black currants, but maintains its secondary aromas.
What is its make-up?
It has very high tannin levels and high acidity. This makes it an ideal choice for winemakers seeking a to create an age-worthy wine. In the Santa Rosa Valley, the warm days with cool nights help ripen the grape, but also preserve the structure.
